For the main game(s) 2.5D is perfect. However, for a spin off such as LBPK? (or any future one for that matter) Sure, but for me the charm in the series is the 2.5 dimensional play.

you can always just use an isometric level design, and try to transition through the z axis smoothly with the new movers when jumping, it will work smoothly enough, and it will have a similar feel in creation to LBP2 when you're building in 2.5D (hopefully)

If it was to be a 3D game then it would have to be very simple and easy to create. LBPK was a 3D racing game but it was hard to create levels in it. Anyway 3D games with a glitched camera were made in LBP2. So making a 3D game in LBP3 will probably be even more possible.
