Tips on creating a level with controls like the story minigame 'Stuck in a Jam'

In 'Stuck in a Jam' and the story level with the fiery caterpillar your cart automatically accelerates and turns corners but you can speed up or slow down to a certain extent as well as adjusting your road position.

I'm trying to create a level with similar controls - any tips on how to set up the cart to do that? The basic cart options in the Handling Tweaker don't really help - autopilot is the closest I've gotten but it doesn't seem to allow for any player interaction at all. Could I override it with a kartinator/controllinator combo?
