You just have to erase the road (this option is in with all your roads and bridges). Then you need to paint the erased part with a certain type of road (sorry i forget its name but its also in the road section). This is so you don't die everytime you jump over it. Then you need to paint the same section with the no respawn road. That way they won respawn till after the jump. After that just put a object (like a giant block of wood) and leathalize it. That way if they let go they hit it and die. You might not need to use a leathalizer. I think they should die after falling so far on their own.

I know that but how do you remove all the track and have something to kill you if you fall. Use the Delete Track tool. It looks like an eraser. Your track will have to be elevated to create a chasm to grapple over.
