Enabling Tilt and Rotation Functionalities without the use of a Controlinator?

^^^ As questioned  I have no idea on how to use the unique Vita functionalities without using a Controlinator. It must be possible because on one of the Jackpot City levels, the player uses a Grapple Hook to grab a grabbable object and uses Tilt to cross gaps while attached to the object.
