I played community versus levels with someone in my friends list, but when I check how many wins I have left on the pin, the number doesn't change, I don't know what's happening.

Make sure it's against an online player as that's a requirement for that pin/trophy.

You have to win the level, meaning you must have more points than any other player when you are at the scoredboard. Maybe the level just has a Game Ender without a Scoreboard, and when it ends it just shows the level screen with the title, description etc. That doesn't count as a win (I think).
