Because they can't figure out a simple way to represent a sound that's coming from a constricted airway. Though tbh, I think it sounds more like GWWWWAAAAAAAAHHHHHHH,shhhhhhhhu than Zzzzzzzz.

I believe it originated in Comic Books in the early 20th century as a form of visual short-hand (it was also sometimes portrayed as a log being sawed); In Japan, they don't have the "ZZZZZZ" sleeping shorthand convention; they use a bubble coming out of a persons nose to indicate that they are asleep
