I have an obstacle course level and want to have a sackbot in there completing it. I set it to act, waited for the countdown to finish, then completed the course. However, when I tested the sackbot out, it would fail the course, either by missing a jump slightly or letting go of a roller too soon. How can I fix this?

Well... tou need to make sure that the sackbot is in the EXACT same staring point (not one iota different) or you will have discrepancies in where it ends up. In other words, It records your button presses, its not recording the sackbots position at all.

I already made sure it was in the same place, I even unpaused it to make sure the sackbot was definitely on the ground before recording, and not moving until the red recording button comes up.

Well if it is in a different place, even by a centimeter, it will not do the exact same movement. It records button presses and nothing else. Remember that.

it's not that, it's in perfect placement. Sometimes it'll be working absolutely perfectly, then suddenly do some weird control and die (like suddenly letting go of a roller too early).

Well if it is for a cut scene, not a part of the actual live gameplay, I would use a sequencer so you can time everything exactly without any discrepincy.
