When editing. loading some of the simplest objects takes sometimes up to a minute. what gives? Should I disconnect the PS3 from the internet while building?

No just make the time shorter, so they appear at a faster rate ( 0.1 or 0.2), if thats not what you mean then your gonna have to use a timer.

No I mean, when I select the item I want to spawn. I go to emitter settings -> pick object -> select simple block with spikes on -> waiting +1 min -> then I can place it.

I go to emitter settings -> pick object -> select simple block with spikes on -> waiting +1 min -> then I can place it. You'll find the same thing when just picking items from your Goodies Bag. When you're online, it checks with the LBP server to see if the item, or anything it contains, has been moderated by MM. When the LBP server is down or running slowly (which was the case at the time you posted), this can take a very long time, so working offline will be much quicker.
