How are these music pieces interactive? They just seem like regular music to me.

If you select them in Create Mode and press Square, you can tweak the volumes of individual tracks (melody, percussion, accompaniment, etc). This is useful if you want the music to change volume or impact with the gameplay or cutcene.

I agree that the term "interactive" is perhaps a little misleading. The "interactivity" they're referring to is that you can create several copies of the same music box, with the volume sliders set to different amounts, and switch between them as the player progresses through the level, allowing you to alter the mood of the music to fit the current scene while the music continues to play uninterrupted.
