Unless they snuck it in last minute, no. jump animations are random and cannot be altered/set to specific animations.

IIRC, you can rotate sackboy with the sticks and triggers but there is no direct manipulation of the animations. If you just want sackboy to do a certain flip however, you can probably accomplish it with a rotator hooked up to a couple of timers. Hope this helps
