I'd go for the Sci-Fi theme, then I would write the name and discription then draw the level on some paper. I start with an Idea pile of paper then make the official plan.

I like the living in giant tree idea and the camping idea. Maybe you could combine them both?

Well I like the cave/mythical idea, mostly because of the mention of giant monsters, and that implies epic boss battles. However, if you're fairly new to LBP--and I'm not saying that you are, I'm just not certain whether you are or not--then you probably shouldn't go creating something that involves a bunch of boss fights, epic or otherwise. Other than that, I like the sci-fi idea, and the living in a tree idea is unique.

Go for the either the tree or camping idea, it sounds very original, I haven't seen a level that has that idea yet.
