They're a typically Roman meal, along with Bucatini (that are hollow spaghetti) alla Amatriciana (tomato with roasted bacon). If you guys want to know how to cook that stuff the Italian way, I'll be happy to teach you. @jww Ravioli are pasta made with eggs (basically things like spaghetti are done only with water and flour, without eggs, eggs substitute the water). They are stuffed with ricotta, spinaches and a bit of nutmeg. Usually they're seasoned with Rag?, that is Tomato and grind of meat (usually beef). As far as it concerns Spaghetti alla Carbonara... You have to take a large frying pan with a high border like this. http://www.toomaki.com/immagini/i0012-padella-saltare-alluminio.jpg You must pour less than a spoon of oil in it. Then you cut the bacon into little pieces and put them into the oil with a piece of garlic. You must fry the stuff until the garlic starts to become golden, NOT brown, then you switch off the fire, and TAKE OUT the piece of garlic. I think that you can use this instead of cutting the bacon, it's the same. http://www.pezzetta.it/catalog/images/pancetta%20a%20cubetti.jpg It's important that you don't put too much oil since the bacon has already a good amount of fat that will melt, and make sure that the bacon doesn't become crispy, but remains a little softer. The original receipe says bacon, but I prefer to use ham, since it has a more gentle flavour. After you've fried the bacon, break two eggs for every half a kilo of pasta you're going to cook in a dish and start to work the egg like you do when you prepare omelettes. When you have finished to work the eggs, add a little of black pepper (that's why it's called carbonara) and some grinded cheese. The cheese should be 30% sheep mature cheese and 70% grana padano, that's really important. You can avoid the sheep cheese, but without the Grana...start to think to cook something else Now you have to cook the spaghetti. You should take note of the cooking time on the pack, and take them out of the water one minute before what it is said on their packaging. It's important to remember that the estimated time is counted on a pot of water that is already boiling (add a little bunch of cooking salt ONLY WHEN the water is boiling) and where the amount of water covers COMPLETELY the pasta that is in it. When the time has arrived you must pour the pasta here http://www.readystudygo-project.net/IT/Kitchen/path2/scolapasta_1manico.jpg and let the water flow out well, making the spaghetti jump a little in that thingy that I don't know how you name it. When the water is gone, you must wash the spaghetti a little under flowing water. It must not be neither hot nor cold. It's important to wash the starch that the pasta releases, to avoid that spaghetti becomes a glue. Once you have washed the pasta, light the fire, put the frying pan on it and pour the pasta in the pan, then pour the eggs you prepared on the pasta. Now there's the real tricky part. You have to continuosly move the pasta with a wooden fork, while tossing the pan a bit and make the pasta actually jump a bit in the pan, with a circular wrist motion, not wide and rather swift, you have to be sure that the spaghetti on the bottom of the pan don't stay there forever, but move continuosly. At the same time you must take care that the egg don't become an omelette, it must cook, become creamy and slowly attach to the spaghetti without starting to become a pancake That's the real tricky part the first times, because there aren't times, but only good sense in understanding when you must stop to cook the spaghetti. It's tough to teach you in a language that is not mine, so I hope you understand. It's not that difficult and can be prepared in a 20-ish minutes. If you have any questions, I'll be glad to answer. Finally some People with good Taste! I'm a Cook, so actually i don't have a favourit meal at all. The Restaurant i did my Apprenticeship in, was italian and german. I know a lot bout classic italian cuisine. "Saltimbocca a la romagna" is sure one of my most beloved ones. I like good and simple homade Food. Within my Family and Friends i'm kinda famous for my Spaghetti Bolognese. My old Chef de Cuisine tought me the classic Recipe once. But i don't like Chicken-liver so i leave it out of my Sauce. I make Pasta myself and i give it away to my Friends each Month. Cooking is my Passion. My Life. DeKay: me too! I love saltimbocca, one of my friends from culinary school makes it all the time. And I may need to try chicken livers in my Bolognese. I worked with a chef from Italy last year, taught me the most unreal Bolognese ever; mortadella and pancetta, ground together, lots of nutmeg, a little cream, and soffrito. We stuffed tortellini with it and served them in a brollo made from chicken stock fortified with a whole capon and a head of fennel, simmered for about six hours. It was a magical experience. Something I've been making a lot recently is roast chicken. It's so simple, and so lovely. I marinate the chicken in buttermilk for 12-24 hours before cooking, usually with some thyme. (Heston Blumenthal proved a few years ago that marinades containing yogourt or buttermilk penetrate the meat far deeper than those that don't). Throw a half a lemon and some fennel inside the cavity. Then if I'm feeling indulgent or I'm cooking for someone special I rub the skin all over with bacon fat and dot butter under the skin on the breast. Roast breast side down until the last 1/2 hour, flip, finish cooking long enough to crisp the breast meat. And baste, of course. I usually serve it on a parsnip puree (steamed parsnips, salt, pepper, butter, squeeze of lemon at the end), wilted greens of whatever I have laying around (rapini is excellent, especially with a little garlic), and either rosemary/thyme roasted potatoes or Hasselback. | 2010-06-16 04:01:00 Author: roux- Posts: 379 |

Now my favorite meal is a good ol' pork carnitas (fried ), w/ green salsa, lime, cilantro and onion.
