In the level that I'm working on now that I want to make my first official level you have to swing across a pit of gas. Is there a way I can make it so when you grab onto one of the sponges the level name and my logo fall into view?

Well you could make it so the logo is above off screen sitting on some dissolve material and put a grab switch on the sponge that dissolves the dissolve material?

Sorry about the double post but another problem came up. When I try to move the level name cardboard thing up the string shortens. Is there a way to fix this?

Move the cardboard up, place dissolve under and dark matter on the side (make sure it does not get in the way) and then loosen your strings, trust me. Then just have a sensor where ever and let the sign fall.
